I'm still not sure what you're driving at.

In the first experiment, you say to alter the EXIF data, and then seem surprised that it changes the output. What is unexpected here?

In the second example, are you saying that Adobe changes an EXIF value or improperly calculates the Black Level Tag? If so, that sounds like an implementation issue, not one of the spec. (Unless you see something in the spec that indicates that the right data is being tossed out by design.

Mostly what I think you're saying is that if you pull stuff out form DNG's as Adobe makes them, they don't render predictably. Again, that does not seem to be a huge surprise.

What is the problem one would encounter if he were not trying to intentionally damage the file?
